Ingredients:
1 kg Whole chicken washed and dried on a towel and put some slits on its body with a sharp knife
1 tbsp salt
3 tbsp Olive oil
2 tbsp Garlic paste
1 tbsp Black pepper
1 tbsp herbs/thyme/oregano/pasta seasoning
2 cups of mixed Veggies like Broccoli, mushrooms, capsicum, carrots, shallots etc cut into small pieces
1 Lemon cut into halves
Method:
Marinate the whole chicken with 1 tbsp salt, 2 tbsp Olive oil, 2 tbsp Garlic paste, 1 tbsp Black pepper
Refrigerate the Chicken for 4 to 8 hours covered with a clean wrap
Pre-heat the oven to 200 degrees Celsius(Heat the oven at 200 degrees for 10 minutes)
Grease the baking tray with 1 tbsp olive oil
Spread the Veggies on the tray covering the whole tray
Put the chicken on the top of the veggies in the center
Roast in the oven for 90 minutes turning the side of the chicken once after 45 minutes
Take it out of the oven sprinkle the lemon juice and the seasoning on the chicken and veggies
Serve hot with Breads
