Stir fried Veggies – Healthy and delicious….

1 cup Brocoli
1 cup Mushrooms
1 cup Capsicum(mix of green yellow and red)
1 cup Beans
1 cup Spinach leaves with stem
1 cup Green peas
1 cup Carrots
1 cup Spring onions
1 cup Shallots
2 tbsp olive oil
2 tsp salt or as per taste
2 tsp black pepper
2 tsp herbs/thymes/oregano/pasta seasoning
2 tbs crushed Garlic

Method:
Cut all the Veggies in small pieces as desired
In a wok heat 2 tbsp olive oil and add the crushed garlic and saute for about a minute on medium flame.
Add all the vegetables and saute for 2-3 minutes
Add salt and mix well
Lower the flame and cook it covered for 5 minutes
Uncover and saute all the veggies on high flame for a minute
Add the herbs or the seasoning as per taste
Serve hot with breads or rice
