Tomato Khejur Aamshotter chutney - Tomato Khajur n Aam Papar chutney....

Ingredients:
4 medium tomatoes – cut into small cubes
10-12 Khajur sliced into halves and deseeded
50 gms Aam papar – chopped into small pieces
1 tsp Panch foron (mix of methi, sarson, saunf, Kalonji, radhuni ..skip whatever is not available)
200 gms or 1 tea cup Sugar
Pinch of salt
1/4 cup water
1 tsp white oil

Method:
In a wok add 1 tsp white oil and add panchforon when the oil is hot
Add the tomato, khajur n aam papar and saute for 1 minute
Add a pinch of salt and add the water and cook covered for 3 minutes on low flame
Add the sugar and cook for 5 minute on high flame till the gravy is dried and it becomes sticky
Optional – Grind 1 tsp panchforon with a very small dried whole mirchi and sprinkle as a garnish on the top
