Ingredients:
Koraishuti / Matar Green peas – 1 kg
Ginger – 1 inch
Green chilies – 4
Maida / All purpose flour – 1/2 kg
White oil – 500 ml
Heeng / Asafoetida – 1 tsp
Salt – 2 tsp
Sugar 1 tsp
Water – 1 cup
Method:
Grind the peas to a fine paste with ginger n green chilies
In a Wok heat up 2 tbsp white oil and add the peas paste
Add salt, sugar, heeng and keep stirring on high flame
Cook on high flame for about 15 minutes stirring frequently till the paste is dry and starts leaving oil.
Cool the mixture and keep aside
Make a dough of maida, water, 2 tbsp oil and salt as per taste. Make about 20/25 small dough balls for kachori
Make small bowls from the dough balls and fill with peas mixture and seal the balls and flatten like Poori of about 3 inches diameter each
Deep fry in white oil.
Serve hot n crispy with Aloor Dum or Chholar Daal
