Chicken Rogan Josh- Kashmiri style without onion ginger garlic tomatoes
Marinate 1 kg chicken with 400 g hung curd for 1-4 hours
In 2 tbsp ghee/white oil add cinnamon sticks, black cardamom, bay leaves, mace, 2 whole red chillies and add the marinated chicken cook for 5 minutes on high flame stirring occasionally.
Add 2 tsp salt, 3 tsp kashmiri mirch (it’s only color no hotness), 3 tsp ginger powder(saunth), 3 tsp fennel powder(saunf), 1 tsp hing dissolved in little water.
Cook covered on low flame for 6-8 minutes till chicken is well cooked. Open and check the consistency it should have little gravy with heavenly ghee floating above it. You can add more ghee on the top if required and add 1 tsp nutmeg powder or garam masala powder.
Serve hot with steamed rice.
